Berry Waffles

Description

Light, golden and irresistibly fluffy, these Berry Waffles make the perfect breakfast or weekend brunch. Topped with seasonal berries, maple syrup and whipped cream, they’re a delicious way to start the day.

Ingredients

Makes: 6 waffles

Waffles

  • 2 cups cake flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1¾ cups milk
  • ⅓ cup melted butter
  • 1 tsp vanilla extract

Toppings

  • Fresh strawberries, sliced
  • Blueberries
  • Raspberries
  • Blackberries
  • Maple syrup
  • Whipped cream
  • Fresh mint leaves (optional)
  • Icing sugar for dusting

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder and salt.
  3. In another bowl, whisk together the eggs, milk, melted butter and vanilla.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  5. Lightly grease the waffle iron.
  6. Pour batter onto the waffle plates and cook until golden brown and crisp.
  7. Repeat until all the batter has been used.
  8. Stack the waffles on serving plates.
  9. Top generously with fresh berries, whipped cream and a drizzle of maple syrup.
  10. Finish with a dusting of icing sugar and garnish with mint.
