Makes: 6 waffles
Waffles
- 2 cups cake flour
- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 1¾ cups milk
- ⅓ cup melted butter
- 1 tsp vanilla extract
Toppings
- Fresh strawberries, sliced
- Blueberries
- Raspberries
- Blackberries
- Maple syrup
- Whipped cream
- Fresh mint leaves (optional)
- Icing sugar for dusting
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, sugar, baking powder and salt.
- In another bowl, whisk together the eggs, milk, melted butter and vanilla.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined.
- Lightly grease the waffle iron.
- Pour batter onto the waffle plates and cook until golden brown and crisp.
- Repeat until all the batter has been used.
- Stack the waffles on serving plates.
- Top generously with fresh berries, whipped cream and a drizzle of maple syrup.
- Finish with a dusting of icing sugar and garnish with mint.
