Creamy Mushroom Soup

Ingredients

Serves: 4–6

  • 500g fresh brown mushrooms, sliced
  • 250g white button mushrooms, sliced
  • 1 large onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp flour
  • 4 cups vegetable stock
  • 1 cup fresh cream
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Crusty bread, to serve

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat.
  2. Add the onion and cook until soft and translucent.
  3. Stir in the garlic and thyme, cooking for another minute.
  4. Add the mushrooms and sauté for 8–10 minutes until browned and tender.
  5. Sprinkle over the flour and stir well for one minute.
  6. Gradually pour in the vegetable stock while stirring continuously.
  7. Bring to a gentle simmer and cook for 15 minutes.
  8. Blend half the soup using a stick blender for a creamy texture while leaving some mushrooms whole.
  9. Stir in the fresh cream and season with salt and pepper.
  10. Simmer for another 3 minutes before serving.
  11. Garnish with fresh parsley and enjoy with warm crusty bread.
