Ingredients
Serves: 4–6
- 500g fresh brown mushrooms, sliced
- 250g white button mushrooms, sliced
- 1 large onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 2 tbsp flour
- 4 cups vegetable stock
- 1 cup fresh cream
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
- Crusty bread, to serve
Instructions
- Heat the butter and olive oil in a large pot over medium heat.
- Add the onion and cook until soft and translucent.
- Stir in the garlic and thyme, cooking for another minute.
- Add the mushrooms and sauté for 8–10 minutes until browned and tender.
- Sprinkle over the flour and stir well for one minute.
- Gradually pour in the vegetable stock while stirring continuously.
- Bring to a gentle simmer and cook for 15 minutes.
- Blend half the soup using a stick blender for a creamy texture while leaving some mushrooms whole.
- Stir in the fresh cream and season with salt and pepper.
- Simmer for another 3 minutes before serving.
- Garnish with fresh parsley and enjoy with warm crusty bread.
